A 5,000-meal-a-day central kitchen for a hospital group in Jiangsu was running four manual prep stations with eight prep cooks to slice, dice, and shred carrots, potatoes, peppers, and cabbage. The Challenge

The kitchen needed a single workstation that could replace the four manual stations, hold slice and dice sizes within ±2 mm of spec, and survive three daily wash-downs. Floor space was tight – the new line had to fit in a 12 m² room with the existing trolley corridor.
